Today, my husband's lunch featured (clockwise):
- Two (very minimally sweetened) coconut macaroons, similar to these
- A few quartered grapes with some honeydew melon
- Kerrygold cheese (like I said, those scraps would come to good use :-p)
- Two fresh mini peppers
- Leftover slow cooked pork and asparagus

I love the lunches you post! Great source for ideas. It would be helpful to know which leftover foods you & your family find to be good cold.
