Today, my preschooler's lunch featured (clockwise):
- Leftover roast chicken, with Everyday Paleo's Thai no-peanut sauce for dipping. I subbed organic sunflower seed butter for the almond butter in the sauce and it turned out deliciously.
- Trail mix: raw almonds, a couple of dates cut into smaller pieces, and a few organic bake dried apple chips.
- A sliced-up pluot.
- A salad: romaine, shredded Kerrygold cheese, heirloom tomato, and shredded carrot, with a drizzle of olive oil.
