I have been browsing your lunchbox posts for ideas now that school has started and I love the variety that you have in them. I was wondering if your preschooler eats the different leftovers and eggs cold at lunch time? If I could convince my girls to eat those things cold (reheating isn't an option) that would really open up the possibilities!
Yes, my preschooler eats everything somewhat chilled - her lunchbox is insulated, so it retains the chill from the fridge. I frequently serve her leftovers cold at home, too, though, so I'm fairly sure that she doesn't make a distinction between food warmed and food chilled in that way. Good luck to you figuring out some items that they'll eat without heating or reheating! :)
