Dairy-Free Gluten-Free Grain-Free Sugar-Free Primal Paleo Pancakes
Though the blog post title is elaborate, there's no elaborate measuring and mixing here! In fact there's not even any kind of flour; though I do use alternative flours like coconut flour from time to time, not in this recipe - this is my "We need pancakes now!" recipe.
Play a banana-themed soundtrack while you're working, if you like:
Lazy Day Pancakes
Makes approximately 12-16 cakes
Ingredients
1.5 large bananas (or 2 medium ones)
3 eggs
1 tsp. cinnamon
1/2 tsp. ground ginger
Dash vanilla extract (optional)
Pinch nutmeg
Pinch salt
Directions
Blend all the ingredients together in a blender on high for at least 2 minutes, until perfectly smooth and there are lots of air bubbles whipped into the batter.
Heat a couple of tablespoons of stable cooking fat such as butter, coconut oil, or macadamia oil in a large pan on medium heat. When the oil starts to shimmer, pour in the batter to make 2.5" cakes. Allow the cakes to cook in the pan until almost all the way done before flipping; you'll see bubbles pop and stay "popped" when they are ready to flip. Continue cooking the rest of the cakes, adding a little more cooking fat to the pan before each new set of pancakes.
Serve warm with fresh fruit and butter to top, if desired.

*le sigh* I have almost-over-ripe bananas (and cherries, although I'm thinking "fish" and "salsa") on my counter. I love me some pancakes...breakfast for dinner may be in order tomorrow!

ReplyDeleteI found the salt was not necessary for flavour, may I ask if there is a reason you left it in there? My "no eggs" son even eats "banana cake" so that's how I get egg into him. I've read that it works with pumpkin, I tried pureed pineapple but didn't find it worked as well as the banana did. I intend to try as many different fruits and sweet vegetables as I can come up with. Has anyone tried any other combinations?

ReplyDeleteMost of the time I enjoy a pinch of salt even with sweet dishes - but that's me. If you like it without salt, by all means go for it!
I have tried soft-baked sweet potatoes with eggs, but found that they were too moist and the pancakes fell apart quickly. Maybe there's a secret to "drying" them out for sweet potato pancakes.

Thank you, thank you, thank you for posting this recipe. I just made it for breakfast this lazy Sunday morning and it was awesome. I love that it didn't taste like I was trying to "Paleo-ize" an existing recipe, it was just good!

DeleteWe ate these for breakfast this morning and they were FABULOUS! I was really blown away by the flavor and texture considering what simple and healthy ingredients are used. NO grain AND NO sugar/sweetener! The best part was that my toddler always used to have porridge for breakfast before we adopted the primal diet but he won't eat eggs. He ate 4 of these pancakes!!! Thanks a million!
ReplyDeleteAlso, these have a slightly crepe-like feel so I bet that adding homemade hazelnut butter would make them the Paleo crepe with nutella!

DeleteI'm trying to get both my parents to eat healthier, as they are both borderline for having diabetes, they have high blood-pressure and cholesterol. I followed this recipe exactly, using a VitaMix blender that I recently invested in.
ReplyDeleteFAIL!!!
First, the pancake "batter" although had the consistency of normal pancake batter, goes flat soon after adding to the pan. It is so flimsy, that by the time you are able to flip it, without if falling apart, it's already blackened or very dark. The "golden brown" pancake in the many pictures posted online is impractical.
Second, I learned after doing lots of research and seeing people do this online that you should NOT blend the batter. The consistency of egg and banana should be rather thick. Otherwise you will get the flimsy, easily burned, un-flippable batter than I was left with after following these directions.
I spend nearly an hour in the kitchen. Wasting precious ingredients that are NOT cheap, like vanilla extract. I didn't even bother to taste it, and threw away the rest of the "batter" that was fast thickening in the blender as I had to pour one small pancake circle after another waiting patiently for it to be "flippable" while using med-low heat, because anything higher will just burn the batter, whilst leaving it still in a mushy state.
I say again, FAIL!!!

DeleteThe one I posted here is what has worked for our family on a consistent basis. As I note in my "About" page: "Sometimes I publish recipes for dishes that went over very well at home - there's a little of everything, from side dishes and veggie options, to dairy-free (or potentially dairy-free) options, to main courses, to desserts. If you try them out, please season to your liking and cook to your desired texture - I try to note the general taste/texture that results that we enjoy, but you may like something chewier, or crispier, or saltier, so taste and observe as you go along." I do not own a Vitamix, and I often use a mini food processor to blend our batter (which of course means that the batter does not turn out as finely blended as it would with a Vitamix).
