Lunchbox #27


Today, my preschooler's lunch featured (clockwise):
  • Leftover Smoky Autumn Beef Brisket Soup (liquid drained away)
  • Trail mix - nuts and dried fruit
  • Baby carrots and Kerrygold Ballyshannon cheddar
  • Cucumbers and yoghurt dip

Thanks for this lunchbox adventure... PS what is the link to Lunchbox #1! And how much time do you REALLY spend cooking and shopping. I am sure impressed with the variety here! wow. I want your kids lunches, so does my hubby!

    I do spend a fair amount of time cooking, but I also cut corners - tonight I turned a slow cooked leftover leg of lamb into a stir fry (I used my kitchen scissors to slice the lamb ultra thin) with carrots, onions, and baby bok choy. Actually, kitchen scissors are one of my major fall backs (I own two pair!) because they make short work of cutting meat and veggies into a dish - I just try to keep "raw meat" scissors away from veggies that I'd otherwise be eating raw to avoid cross contamination.

    I also use my crock pot all. the. time, which saves my sanity. Sometimes I throw meat and veggies in there not knowing precisely what I'll make of them at day's end, but it's just a relief to have something essentially "done" by the time the day is wrapping.
