Lunchbox #162


Today, my preschooler's lunch featured (clockwise):

  • Eggs baked inside a slice of ham - think I got this idea from Paleo Comfort Foods!
  • A Clementine
  • Walnuts and organic dark chocolate chunks
  • Spaghetti squash tossed with sesame oil, sun dried tomatoes, sesame seeds, and spinach

  1. I am rummaging through your lunchboxes looking for inspiration. Its hard to know what will be good cold and what will not get soggy.

    How on EARTH did you get the ham to turn into a bowl!?

    The problem I am having is starting so late with my kids - they eat everything plain and from a very short list. Sigh...

    I'm also getting hungry looking at your boxes and would love a plantain right now please.

    I agree that it can be challenging to figure out what will stand up texture wise. So much depends on the time lapsed between packing the lunch and eating, the temperature/environment where it's stored, and whether microwaving is available as an option (for my preschooler, it isn't). It's often a guessing game for me as well. Some things - like scrambled eggs - my daughter doesn't mind eating cold because I've never made a big deal out of them being cold, and it hasn't yet occurred to her that it might be an undesirable temp. (Though I'm sure this might dawn on her sooner or later!)

    The ham I added to a muffin tin - one slice for each muffin cup. After tucking the ham into each cup, I cracked an egg into the ham cups. 425F for about 15 minutes did the trick.

    Good luck with your older kids adjusting! I know that is a very frequently mentioned challenge in paleo and traditional foods forums, so you are most definitely not alone.
