Same Lunch, Different Eaters


Here's a lunch that we had at home last week. My 4.5 year old has become kind of resistant to cold greens of all kinds, but I'm OK with that, since she still watches me sometimes eat huge salads, and she'll still happily eat spinach or kale as part of a warm dish.

The above lunch demonstrates how you can create two distinct lunches without changing your actual game plan a whole lot. The only material difference is - her lunch has a cut up white potato, while mine has a pile of greens. I had my kitchen shears at the ready for much of the prep, and to each of our bowls I added:

  • Sliced red and yellow pepper
  • Sliced carrots
  • Sliced grassfed steak
  • Pistachios (mine, for the salad)
  • Sliced baby zucchini (mine, for the salad)
  • Homemade avocado ranch, drizzled on my salad, but in the littlest compartment for my daughter to dip her veggies

    I did this, plus a few drops of hot sauce and fish sauce, and a very ripe avocado blended in. It's a flexible recipe that goes where you take it! :-D

  3. I often do that for my son if we have salad for dinner. He is just starting to like the salad leaves, and he's not big on his food mixed up together. He likes the vegetables in the salad though, so I just give him the cut up bell peppers, cucumbers, carrots etc. on his plate along with whatever protein we're having on the salad. It works pretty well and he seems to like it.

  4. Ahh that looks good! I really love it that you guys do potatoes. I know that some "paleo" people don't do them and I don't really understand why. It's a lot easier for me to avoid grains (I don't anywhere near 100%, but I feel so much better when I do) when I have potatoes as a cheap starch to munch on.

    Steak is my one year old's favorite food right now - I may have to do a post about it. We just moved and don't have our dining room set up yet. Yesterday we ate in the living room and I didn't put meat on his plate because I didn't want it on the carpet... He was not fooled. He begged for steak from our plates like a puppy. Previously he has come up to my plate and swiped an entire steak even when he has some cut up on his own plate. Kid is obsessed.

  5. I am with the kid on this one :). Lately I have been meh on the salads. I make one for my husband, and then I take a giant pile of spinach and wilt it in butter for 30 seconds for me. Just not into the cold greens for the last few months.
