Lunchbox #136


Today, my preschooler's lunch featured (clockwise):

  • Silver dollar sized grain free banana pancakes
  • Fresh organic gala apple
  • Coconut oil sauteed plantains
  • Asparagus with salt and garlic

  1. Hi! I was just wondering what your banana pancake recipe is. I have one but it is really easy to burn them without the middles cooking AND is so sweet that it is more of a dessert pancake.

    BTW: Thanks for showing all of your toddler lunch ideas. Lunch is the one meal that I flounder on and my LO doesn't eat much anyway. Hopefully we can find a few favorites from your blog!

  2. Hi!

    Check out this recipe for a flour-free fuss-free banana pancake. Making the pancakes slightly larger than a silver dollar is the most manageable size for this recipe as it means that everything cooks fairly evenly and doesn't fall apart - so flipping's easier, too.
